What is a Butcher?

A butcher is someone who has trained in the art of selecting, buying, ageing, preparing and cutting meat.

How Do I Prep A Steak?

For most steaks, allow to come to room temperature for 30 minutes or longer. If you cook a steak straight from the fridge, it will lower the temperature of the oil and you will get a miserable, grey steak and there will be no Maillard reaction.

What Is The Maillard Reaction?

The Maillard reaction is when fresh meat is cooked in a pan in very hot cooking oil  (140 to 165 C) and the reducing sugars and amino acids react and brown the meat and give it its desirable flavour.

What Is The Best Way To Cook A Steak?

There is no best way, there are just personal preferences. Most chefs advocate searing on a hot pan followed by a spell in the oven to finish. Some say season before cooking, others say season afterwards.
Three things every chef agrees with:

  1. Bring the steak up to room temperature first
  2. Make sure the pan is hot before you put the steak on. Use a high-quality cooking oil for steak like tallow.
  3. Allow 5 to 10 minutes resting after the steak finishes cooking.

What Is The Best Type Of Steak?

Every steak has its attractions and of course, there is the price to be considered. Again this comes down to personal preference.

How do I know what cut of meat is best for my family?

Every individual has a different palate of flavors and textures. We offer a wide Variety of Healthy, sustainable cuts ranging from Japanese Wagyu, Australian Wagyu, Dry Aged, Marbled Kobe Specials, All natural Pork, Lamb, Fresh Seafood, Free Range Poultry, Bulk Buying Options and much more. Our Sources

Is your meat sustainable?

Yes! We source exclusively from family farms and ranches with high standards of sustainability.

Do you carry Halal?

We do not stock Halal products, we can, however, place a special order for them. This would cost a nominal fee and add time to your estimated delivery date.

Is your chicken organic?

All chicken cuts in our store are free-range chicken. They were never given antibiotics, hormones or steroids. They were fed a 100% vegetarian diet and are a Non-GMO Project Verified product. We also offer USDA certified organic chicken. The difference between their organic chickens and the chicken we offer is that the food they were fed was organic. Both were raised on sustainable family-owned farms, air chilled and fed a natural diet. The reason we offer their free-range chicken and not their organic chicken is that our company also serves to restaurants who do not have a high demand for organic chicken products.

Storing and Preparing Meat

How long can I store your products in the refrigerator and the Freezer?

All of our products are individually Cryo-packed to ensure top freshness for each protein .

All Fresh Beef products can be safely stored in your refrigerator for up to 10 days.

All Frozen Beef products can be safely stored in your freezer for up to 2 months.

All Lamb And Pork products can be safely stored in your refrigerator for up to 7 days.

All Frozen Pork products can be safely stored in your freezer for up to 2 months.

All Fresh Poultry products can be safely stored in your refrigerator for up to 5 days.

All Frozen Poultry products can be safely stored in your freezer for up to 2 months.

All Fresh Seafood products can be safely stored in your refrigerator for up to 3 days.

All Frozen Seafood products can be safely stored in your freezer for up to 2 months.

All proteins will have a distinct smell if not Appropriate for consumption.

All Proteins Should not be frozen for over 2 months.

You need to closely monitor frozen meats for spoilage. You can’t leave them in the freezer too long or they become watery, limp, and tasteless, as you’ve probably experienced, that’s the dreaded “freezer burn” which makes meats taste bland and unappetizing.

Shipping Information

Do you ship your products my address?

No. Currently we do not ship our products. But you can place your order online for certain products like Charcuterie Plates, Sandwiches or River Packs to avoid wait time. In-Store and Curbside pickup available.
